Chicken Marsala
- 4 chicken fillets
- 2 Tbs flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbs butter
- 2 Tbs olive oil
- 1 medium onion, finely chopped
- 1/2 lb mushrooms, sliced
- 1/2 tsp oregano
- 1/2 cup chicken broth
- 1/2 cup Marsala wine
- Preheat oven to 350°F.
- Mix together the flour, salt, and pepper.
- Dredge chicken pieces in flour mixture.
- Heat butter and oil in a heavey skillet until foaming.
- Add chicken pieces and quickly sauté until golden.
- Transfer to oven casserole.
- Add chopped onion to the skillet and sauté until limp.
- Add sliced mushrooms and sauté briefly.
- Spoon broth over chicken.
- Cover with mushrooms and onion.
- Sprinkle with oregano, chicken broth, and wine.
- Cover and bake for 1 hour.
