Chicken Marsala

  1. Preheat oven to 350°F.
  2. Mix together the flour, salt, and pepper.
  3. Dredge chicken pieces in flour mixture.
  4. Heat butter and oil in a heavey skillet until foaming.
  5. Add chicken pieces and quickly sauté until golden.
  6. Transfer to oven casserole.
  7. Add chopped onion to the skillet and sauté until limp.
  8. Add sliced mushrooms and sauté briefly.
  9. Spoon broth over chicken.
  10. Cover with mushrooms and onion.
  11. Sprinkle with oregano, chicken broth, and wine.
  12. Cover and bake for 1 hour.
