Chocolate Cheese Pie

Makes 8 servings.

    Crust

  1. Chop the graham crackers in a food processor.
  2. In the food processor thoroughly mix the graham cracker crumbs, brown sugar, nutmeg, butter, and unsweetened chocolate.
  3. Press into 9-inch pie pan.
  4. Chill until firm.
  5. Filling

  6. Melt chocolate over hot (not boiling) water.
  7. Cool about 10 minutes.
  8. Blend cream cheese, 1/2 cup sugar, salt, and vanilla.
  9. Beat in egg yolks, one at a time.
  10. Beat in cooled chocolate.
  11. Blend well.
  12. Beat egg whites until stiff but not dry.
  13. Gradually beat in 1/4 cup sugar and beat until stiff and glossy.
  14. Fold chocolate mixture into beaten whites.
  15. Fold in whipped cream.
  16. Assemble

  17. Pour into chilled crust.
  18. Chill overnight.
