Fried Rice
Makes 3 servings
- 3 slices of bacon cut in half
- 1/4 cup diced onion
- 1 cup cooked rice
- 2 tablespoons soy sauce
- 1/4 cup water
- 2 slightly beaten eggs
- Lay bacon in frying pan and fry until crisp.
- Remove bacon drain on paper towels and crumble.
- With the bacon drippings in the pan stir fry onions for 2 minutes.
- Add rice and stir fry for 7 to 8 minutes.
- Add soy sauce, water and crumbled bacon to the pan.
- Reduce heat and stir.
- Pour eggs on top of rice mixture.
- Stir fry for 3 to 4 minutes or until the eggs are cooked.
