Ginger Ice Cream
Makes 1/2 gallon
- 1 pint heavy cream
- 1 pint light cream
- 1 cup milk
- 1 1/3 cup sugar
- 2 oz ginger, diced, grated, or puréed
- 1 teaspoon vanilla
- 2 dashes of salt
- Combine the light cream, ginger, and vanilla in a saucepan.
- Bring the mixture just to a boil.
- Turn off the heat.
- Let steep for 1 hour.
- Combine the remaining ingredients.
- Pour the ginger mixture through a mesh strainer into the other ingredients.
- Mix thoroughly.
- Chill before freezing, as needed.
- Freeze using an ice cream maker.
