Ginger Ice Cream

Makes 1/2 gallon

  1. Combine the light cream, ginger, and vanilla in a saucepan.
  2. Bring the mixture just to a boil.
  3. Turn off the heat.
  4. Let steep for 1 hour.
  5. Combine the remaining ingredients.
  6. Pour the ginger mixture through a mesh strainer into the other ingredients.
  7. Mix thoroughly.
  8. Chill before freezing, as needed.
  9. Freeze using an ice cream maker.
