Ginger Syrup
Makes 1 1/2 cup
- 1/2 cup 3 oz grated fresh ginger
- 1 cup packed brown sugar
- 1 cup water
- In a small saucepan combine the ginger, brown sugar, and water.
- Bring to a boil over high heat, stirring constantly until sugar dissolves.
- Reduce heat and simmer for 5 minutes or until sugar is completely dissolved.
- Remove from heat and let steep until cool, about 30 minutes.
- Strain through a fine-mesh sieve placed over a container with a tight-fitting lid.
- Cover and refrigerate until well chilled.
