Ginger Syrup

Makes 1 1/2 cup

  1. In a small saucepan combine the ginger, brown sugar, and water.
  2. Bring to a boil over high heat, stirring constantly until sugar dissolves.
  3. Reduce heat and simmer for 5 minutes or until sugar is completely dissolved.
  4. Remove from heat and let steep until cool, about 30 minutes.
  5. Strain through a fine-mesh sieve placed over a container with a tight-fitting lid.
  6. Cover and refrigerate until well chilled.
