Lavender Gomme Syrup

  1. Heat 1/4 cup water to a near boil.
  2. Put the gum Arabic in a glass, small jar, or small bowl.
  3. Slowly stir in the hot water, stir until the powder is integrated.
  4. Let sit for 2 hours.
  5. Stir again to smooth out the mixture.
  6. Heat sugar and water in a saucepan over medium heat, stirring to dissolve the sugar completely.
  7. Bring to a boil, then remove from the heat.
  8. Add the lavender flowers.
  9. Cover, and let flowers steep for 30-45 minutes.
  10. Strain through a fine mesh sieve or paper coffee filter into a measuring glass (with a lip for easy pouring).
  11. Add lemon juice.
  12. Add gum Arabic mixture.
  13. Stir until the syrup is smooth and has thickened.
  14. There may be white foam or small clumps on top, simple skim them off.
  15. Pour into a clean container (preferably sterilized), cap, and refrigerate.
