Lavender Gomme Syrup
- 1/2 cup granulated sugar
- 1/4 cup gum Arabic
- 1 1/2 cups water, divided
- 1/2 cup fresh organic edible lavender flowers (or 2 Tbs dried lavender flowers)
- juice of 1 small lemon (about 2 Tbs)
- Heat 1/4 cup water to a near boil.
- Put the gum Arabic in a glass, small jar, or small bowl.
- Slowly stir in the hot water, stir until the powder is integrated.
- Let sit for 2 hours.
- Stir again to smooth out the mixture.
- Heat sugar and water in a saucepan over medium heat, stirring to dissolve the sugar completely.
- Bring to a boil, then remove from the heat.
- Add the lavender flowers.
- Cover, and let flowers steep for 30-45 minutes.
- Strain through a fine mesh sieve or paper coffee filter into a measuring glass (with a lip for easy pouring).
- Add lemon juice.
- Add gum Arabic mixture.
- Stir until the syrup is smooth and has thickened.
- There may be white foam or small clumps on top, simple skim them off.
- Pour into a clean container (preferably sterilized), cap, and refrigerate.
