Mashed Potatoes
Serves 4
- 4 large Idaho potatoes, peeled and cut into 2-inch pieces
- 1 tsp salt
- 4 Tbs butter
- 1/2 cup heavy cream, milk, or chicken broth
- salt and pepper to taste
- Place potatoes in a medium pot and cover with cold water and salt.
- Bring to a simmer and cook, uncovered, for 20 minutes or until potatoes are very tender. Test with a fork.
- Drain off water and return potatoes to the pot.
- Add the butter and mash.
- Add the cream, milk, or broth gradually.
- Salt and pepper to taste.
