Mashed Potatoes

Serves 4

  1. Place potatoes in a medium pot and cover with cold water and salt.
  2. Bring to a simmer and cook, uncovered, for 20 minutes or until potatoes are very tender. Test with a fork.
  3. Drain off water and return potatoes to the pot.
  4. Add the butter and mash.
  5. Add the cream, milk, or broth gradually.
  6. Salt and pepper to taste.
