Minestrone Soup

8 cups water

1 package minestrone soup mix
-
1 lb sweet Italian sausage

2 carrots, peeled and chopped

1/2 cup chopped onion

1 28 oz can
crushed tomatoes

1 cup elbow macaroni

1/4 cup dry split peas
1/2 cup dry kidney beans

4 beef bullion cubes, crumbled

1 tsp basil
-
1 tsp oregano
-
1 tsp parsley

1/2 tsp pepper

In a large pot combine the 8 cups
water with the soup mix.

Simmer 1 1/2 hours.

Remove skin from sausage Brown the sausage in a skillet.

Add vegetables and saute 3-5 minutes.

Add sausage and vegetables to soup and bring to a boil.

Add macaroni and simmer for 30 minutes.
