Molly's Meatballs with Onion Sauce

Serves 6

    Meatballs

  1. Combine beef, bread crumbs, egg, one onion, parsley, salt, black pepper, and nutmeg in a large bowl and mix thoroughly.
  2. Heat 2 tablespoons of oil in a skillet.
  3. Form the meat mixture into 1 1/2 inch balls.
  4. Working in batches fry the balls on each side until well browned, about 4 minutes per side.
  5. Transfer the meatballs to a plate and set aside.
  6. Onion Sauce

  7. Add 2 tablespoons oil to the skillet and heat.
  8. Add the chopped onion and cook over medium heat, stirring occasionally, until golden brown.
  9. Add the flour and stir to combine.
  10. Pour in the chicken broth and cook, stirring constantly, until thickened and bubbling.
  11. Return the meatballs to the skillet and simmer for 15 minutes.
  12. Serve over rice, mashed potatoes, or wide egg noodles.
