Peanut Marinade
Makes 2 cups.
- 1/2 cup chunky peanut butter (no salt or sugar added)
- 1/2 cup peanut oil
- 1/4 cup white wine vinegar
- 1/2 cup tamari
- 1/4 cup fresh lemon juice
- 4 garlic cloves, minced
- 8 cilantro sprigs, minced
- 1 whole dried red chili pepper, minced, or 2 tsp dried red pepper flakes
- 2 tsp chopped fresh ginger
- Combine all the ingredients in a blender or food processor.
- Blend well to emulsify, adding a few drops of water if the mixture is too thick.
- Marinate beef or chicken overnight.
