Pork and Red Pepper Burgers

Makes 8 burgers

  1. Heat the oil in a frying pan and fry the onion and bacon over a low heat until the onion has completely softened but not browned.
  2. Add the garlic and fry for 1 minute.
  3. Place the bread and parsley in a food processor, whizz to make crumbs.
  4. Add the onion and bacon mixture, pork, red peppers, salt, and plenty of black pepper.
  5. Whizz until well mixed.
  6. Shape the mixture into 8 burgers and chill for 30 minutes, if you have the time.
  7. Grill

  8. Preheat a grill or barbecue.
  9. Grill the burgers for about 6-8 minutes on each side until golden and cooked through.
  10. Stove

  11. Cook in a little hot oil in a frying pan.
  12. Once browned reduce the heat and cook through.
