Pork and Red Pepper Burgers
Makes 8 burgers
- 1 Tbs sunflower oil
- 1/2 onion, finely diced
- 3 slices of smokey, streaky bacon, finely chopped
- 1 garlic clove, crushed
- 75 g 3 oz crustless bread
- 2 Tbs finely chopped parsley
- 450 g 1 lb ground pork
- 2 roasted red peppers from a jar, drained
- 1/2 tsp salt
- freshly ground black pepper
- Heat the oil in a frying pan and fry the onion and bacon over a low heat until the onion has completely softened but not browned.
- Add the garlic and fry for 1 minute.
- Place the bread and parsley in a food processor, whizz to make crumbs.
- Add the onion and bacon mixture, pork, red peppers, salt, and plenty of black pepper.
- Whizz until well mixed.
- Shape the mixture into 8 burgers and chill for 30 minutes, if you have the time.
- Preheat a grill or barbecue.
- Grill the burgers for about 6-8 minutes on each side until golden and cooked through.
- Cook in a little hot oil in a frying pan.
- Once browned reduce the heat and cook through.
