Pork Chops with Gin and Orange Juice
Serves 6
- 6 pork chops
- flour
- salt and pepper to taste
- 1 clove minced garlic
- rind of 1 orange, grated
- juice of the orange (1/2 cup)
- 1/2 cup gin
- chopped parsley
- Coat pork chops in flour.
- Salt and pepper chops and brown in one layer.
- Sprinkle on garlic and orange rind, then combine orange juice and gin and pour over the top.
- Cover and cook slowly over a low heat for 45 minutes or until tender.
- Serve sprinkled with parsley, with rice on the side.
