Pork Chops with Gin and Orange Juice

Serves 6

  1. Coat pork chops in flour.
  2. Salt and pepper chops and brown in one layer.
  3. Sprinkle on garlic and orange rind, then combine orange juice and gin and pour over the top.
  4. Cover and cook slowly over a low heat for 45 minutes or until tender.
  5. Serve sprinkled with parsley, with rice on the side.
