Spicy Fried Noodles

Serves 2

  1. Mix scallions, soy sauce, ginger, wine and sesame oil together in a small bowl.
  2. Cook linguine according to package directions until done.
  3. Drain and place in mixing bowl and toss with 1 tablespoon of the canola oil.
  4. Add the remaining canola oil to a large deep skillet and heat over medium-high.
  5. Add the scallion mixture and bring to a simmer.
  6. Add the cooked noodles and toss.
  7. Add the spinach and cook until wilted, tossing frequently with tongs.
  8. Stir in lime juice and toss again.
  9. Season to taste with Sriracha sauce.
  10. Divide among plates, garnish with peanuts and parsley, and serve.
