Thin Mint Ice Cream
Makes 1/2 gallon
- 1 pint heavy cream
- 1 pint light cream
- 1 cup milk
- 1 1/3 cup sugar
- 1 teaspoon vanilla
- 1 teaspoon peppermint extract
- 2 dashes of salt
- 1 cup chopped Thin Mint cookies
- Combine all ingredients, except the chips, and mix thoroughly.
- Chill before freezing, as needed.
- Freeze using an ice cream maker for 10 minutes.
- Add the chocolate chips.
- Continue freezing until done.
