Zucchini Muffins
Makes 16 muffins, if optional ingredients are used
- 3 cups grated fresh zucchini
- 2/3 cup melted unsalted butter
- 1 1/3 cup sugar
- 2 eggs beaten
- 2 tsp vanilla extract
- 2 tsp baking soda
- 1 pinch of salt
- 3 cups all purpose flour
- 2 tsp nutmeg
- 1 cup walnuts
- 1 cup dried cranberries or raisins
- Preheat oven to 350°F.
- In large bowl combine sugar, eggs, and vanilla.
- Stir in zucchini and melted butter.
- In separate bowl mix together the flour, baking soda, nutmeg, and cinnamon.
- Stir dry ingredients into zucchini mixture.
- Stir in walnuts and cranberries, if using.
- Pour into muffin pans, filling the cups up generously.
- Bake on middle rack about 25-30 minutes.
