Zucchini Muffins

Makes 16 muffins, if optional ingredients are used

  1. Preheat oven to 350°F.
  2. In large bowl combine sugar, eggs, and vanilla.
  3. Stir in zucchini and melted butter.
  4. In separate bowl mix together the flour, baking soda, nutmeg, and cinnamon.
  5. Stir dry ingredients into zucchini mixture.
  6. Stir in walnuts and cranberries, if using.
  7. Pour into muffin pans, filling the cups up generously.
  8. Bake on middle rack about 25-30 minutes.
