Zucchini Quiche
- 4 medium zucchini, sliced thin
- 1 small onion, diced
- 1 cup Bisquick
- 1 1/2 cup diced ham
- 1 shredded carrot
- 4 large eggs
- 1/2 cup olive oil
- 3/4 cup Pecorino-Romano or Parmesan cheese
- 1/4 cup grated Provolone cheese
- 1/2 tsp basil
- 1/4 tsp oregano
- 1 tsp parsley
- 1/8 tsp pepper
- onion or garlic powder, to taste
- Preheat oven to 350°F.
- Mix all ingredients until zucchini is evenly coated.
- Pour into greased 10 inch pie plate.
- Bake about 1 hour or until golden brown.
