Maple Syrup Cake
Serves 8 or more
- 2 cups all purpose flour
- 1 Tbs baking powder
- 3/4 tsp salt
- 1 cup maple syrup (preferably the darker grade B, or grade A amber syrup)
- 1 cup heavy cream
- 2 eggs, lightly beaten
- 1/2 stick 4 tablespoons butter, melted
- Preheat oven to 350°F.
- Sift together flour, baking powder, and salt; set aside.
- Mix together the syrup, cream, and eggs and add to the flower mixture.
- Beat well and stir in the butter.
- Turn into a 9 by 13 inch pan that has been greased and lined with wax paper.
- Bake 35-40 minutes.
- Cool on a rack. Serve with or without the Maple Butter Frosting.
